Job Description

ROLE OVERVIEW

The Production CDP is responsible for executing and supervising daily production activities across all non-bakery production sections in accordance with company recipes, SOPs, and production plans. This role ensures accurate preparation, cutting, washing, batching, portioning, weighing, labeling, hygiene, system reporting, and cost control within assigned shifts and sections. The Production CDP operates under the direction of the Production Head Chef and is accountable for production quality, discipline, and execution across non-bakery areas.

NON-BAKERY SECTIONS UNDER THIS ROLE

This role covers all non-bakery production sections, including but not limited to:

● Hot Kitchen

● Cold Kitchen

● Prep & Mise en Place

● Sauces & Batch Production

● Proteins & Marination

● Butchery (non-bakery related)

● Vegetable washing, cutting, and preparation

● Portioning, weighing, labeling, and packing

● Production assembly and handover to dispatch

● Any other non-bakery production activities assigned by management

KEY RESPONSIBILITIES PRODUCTION EXECUTION & STANDARDS (NON-NEGOTIABLE)

● Execute and supervise production across all assigned non-bakery sections according to approved recipes, batch sizes, yields, and SOPs.

● Ensure vegetables and raw materials are properly washed, cut, prepared, and handled according to food safety standards.

● Ensure correct portioning, weighing, and labeling of all production items prior to dispatch.

● Ensure consistency of taste, quality, portioning, and presentation across all non-bakery production output.

● Ensure production is completed on time to meet dispatch and distribution schedules.
